From Wikipedia: Because of its ubiquity, Escherichia coli is frequently studied in microbiology and is the current "workhorse" in molecular biology. Its structure is clear, and it makes for an excellent target for novice, intermediate, and advanced studies in the life sciences. Much of our understanding of gene regulation was gleaned from E.coli, and it currently is enjoying a resurgence as an organism in which to study protein-protein interaction networks and the dynamicism of the metabolome.
